2 egg yolks
3/4 cup sugar
1/4 cup boiling pineapple syrup from pineapple slices
3/4 cup cake flour
1/8 tsp salt
1/2 tsp baking powder
2 stiff beaten egg whites
Beat egg yolks until very thick, gradually add sugar and continue beating. Add pineapple syrup, mix well and add sifted dry ingredients. Mix until smooth. Fold in egg whites.
Preheat oven to 325 degrees. Melt 1/4 cup butter in an 8×8 square pan. While preheating I melted the butter in my square dish in the preheating oven.:) add 2/3 cups brown sugar to melted butter. Over this arrange pineapple with a cherry in the middle of each. Pour cake batter over. Bake at 325 for 1 hour or until toothpick comes out clean from center of cake. Turn cake over onto tray leaving baking dish over it for at least 5 minutes. Remove and serve warm with sweet cream (whipped cream)
