Minestrone Soup


In a large stock pot
2 qts beef stock
1 10oz can tomato sauce
2 carrots peeled and chopped
1 lrg potato cubed
3 stocks celery chopped
1/2 head of cabbage chopped
1 handful fresh green beans cut into 1 inch pieces
2 zucchini chopped
2 cans kidney beans
1 Tbs oregano
1 bay leaf
Bring to a boil, cover and turn to low
Let simmer until all veggies are soft
Add 1-1/2 cups noodles and let simmer 15-20 more minutes until noodles are soft!
Serve with fresh Parmesan. ENJOY!!:)
