Baked Veggie Tian


1 Tbsp olive oil
1 yellow onion, diced
1 tsp minced garlic
1 zucchini
1 yellow squash
1 potato
1 tomato
1 tsp dried thyme
Salt & pepper to taste
1 cup reduced fat 4 cheese Italian blend
Preheat oven to 400 degrees. Grease 1 loaf pan
In a skillet sautéed onion and garlic in olive oil until tender, about 5 minutes
Slice all veggies really thin. Place onion and garlic on bottom of loaf pan. Line up veggies on top. Sprinkle with salt, pepper and thyme.
Bake covered for 30 minutes. Remove foil and sprinkle cheese on top. Continue to bake for 15 minutes, uncovered.
