1 cup Vodka
1 tsp. red chili flakes
2 Tbsp olive oil
3/4 lb pancetta or bacon
1 clove of garlic,minced
2 Tbsp chopped, fresh parsley
2 Tbsp chopped, fresh basil
Salt and pepper to taste
1 (28oz) can of Roma tomato’s with juice
2 (8oz) cans of tomato sauce
1 cup heavy cream
In a separate bowl soak chili flakes in vodka set aside for at least an hour.
In a pan heat olive oil, sauté pancetta (bacon) garlic, basil, parsley, salt and pepper until pancetta is evenly cooked. Add vodka mixture and simmer for 10 minutes. Crush and add Roma tomato’s and tomato sauce and 1 (8oz) can of water simmer for 15 minutes. Add heavy cream and continue to simmer for 2 minutes.
Start boiling your penne pasta to desired tenderness.
Drain pasta, top with sauce and lots of fresh parmesan cheese!!
