Daddies Breakfast Potato

This is a large batch recipe you can cut it down to fit your needs.

4 red bell peppers, cut into 1inch pieces
4 green bell peppers, cut into 1inch pieces
2 yellow onions cut into 1inch pieces
1/2 cup butter
2-3 TBSP olive oil
1-2 TBSP chili powder
Salt and pepper to taste
10 lbs potato’s cut into chunks, par-boiled to soft but not mushy
Shredded cheese about 1 cup to sprinkle on top (optional)

Par boil potato’s to soft but not mushy, drain and set aside.
In a large skillet place peppers, onions, butter and olive oil. Cook until all veggies are soft. Add potato’s and chili powder, salt and pepper. Toss and cook. Sprinkle with cheese.
