Chicken Chili Rellano Casserole


Preheat oven to 350 degrees.

1-1/2lbs cooked, cut up chicken. ( I placed my chicken in the crockpot with a cup of verde sauce cooked on high for 4 hrs and shredded)
6-8 Pasilla chili’s, roasted, skinned and seeded. ( you can use 2 cans of whole green chili’s if you like)
1 lb block of cheddar cheese, shredded
1/4 lb block Monterey jack cheese shredded
1/4 lb block of pepper jack cheese shredded
1 -12 ounce can evaporated milk
4 eggs
2 TBSp flour
2 tsp of salt

In a 9×13 casserole dish. Place a layer of green chili’s. Add chicken on top of chili’s.Top with shredded cheese (about half of your mixed cheese) Add a layer of chili’s on top of cheese. In a bowl beat eggs, evaporated milk, salt and flour. Pour on top chili layers. Top with the rest of cheese. Bake at 350 for 45-60 minutes or until done. Let rest 5 minutes before cutting!!


Milky Way Bundt


Preheat oven to 350 degrees.
Grease and flour Bundt pan.

1 box of dark chocolate cake mix
Oil, eggs etc need to make batter according to box. Make sure your eggs are room temperature.
Make batter in mixer and set aside.

6 milky way candy bars,diced.
1/4 cup of heavy cream.
In a microwave safe bowl microwave cream and candy in 30 second intervals until completely melted.
Set aside.
Dice 1 cup of caramels, such as the Kraft caramel squares.
Add milky way cream mixture and diced caramels to cake batter. Pour into Bundt pan and bake for 40-45 minutes until toothpick comes out clean. Let cool in Pan 20 minutes on rack. Turn out of Pan and continue cooling.
Chop 2 (4oz) bars of semisweet chocolate to measure 3/4 cup. In a microwave safe bowl add 1/2 cup heavy cream and microwave for 1. Minute until very hot. Add 3/4 cups of semisweet chocolate that you chopped finely. Let sit 1 minute. Stir until smooth. Drizzle chocolate sauce, I also drizzled caramel sauce and topped with sliced milk way (1 more milky way bar) and a little bit of whipped cream!!!
Next time I make it I will use a traditional Bundt pan!!:)

Not Really Shepherds Pie


Preheat oven to 350 degrees.

In a casserole dish…

6-8 frozen hash brown patties, defrosted.
1-2 cans of corn
1-1/2 lbs ground beef
Salt and pepper to taste.
2 cans beef gravy
1/2 to 1 cup shredded cheese
2 can refrigerator biscuits

Line bottom of casserole dish with hash browns. Drain canned corn and place on top of hash browns.
Brown ground beef, seasoning with salt and pepper. When beef is cooked add gravy, remove from heat. Let rest 5 minutes.
Place beef and gravy mixture on top of corn. Sprinkle cheese on top of beef mixture. Top with biscuits. Bake for 25-35 minutes.

Orange Honey Pork Loin


Preheat oven to 375 degrees

2lbs boneless pork loin
Salt and pepper, to taste
1/4 cup honey
2 Tbsp orange juice
2 Tbsp olive oil
1/2 tsp thyme
1/2 cup chicken broth

Place pork in roasting pan. Season with salt and pepper. In a small bowl mix honey,olive oil, orange juice and thyme. Pour on top of pork. Pour broth in pan. Cook for 45-60 minutes until internal temp. Is 155 degrees. Baste your pork loin as it cooks. When done cooking place on cutting board loosely cover with foil while you reduce your glaze. In a sauce pan place pan dripping and 1 Tbsp cornstarch simmer until sauce thickens. Serve and enjoy!!:)

Chocolate Peanut Butter Chip Blondies


2-1/4 cups flour
2-1/2 tsp baking powder
1/2 tsp salt
3/4 cup butter, softened
1-3/4 brown sugar, packed firmly
3 eggs, room temp
1 tsp vanilla
3/4 cup chocolate chips
3/4 cup peanut butter chips

Preheat oven to 350 degrees.
Grease a 15×10 jelly roll pan.
In a small bowl mix flour, baking powder and salt. Set aside.
In mixing bowl add butter and brown sugar, mix until creamy. Add eggs and vanilla mix until combined. Add flour mixture slowly until incorporated. Stir in chocolate chips and peanut butter chips.
Spread onto prepared pan. Bake at 350 for 20-25 minutes until top is golden brown. Cool on a wire rack.

Hot Buttered Rum


2 sticks of butter (1 cup)
2-1/2 cups brown sugar
2-1/2 cups powdered sugar
1/2 quart vanilla ice cream, softened
1/2 TBSP cinnamon
1/2 tsp nutmeg

In a large pot melt butter over medium heat. Add brown and powdered sugar, mix until combined well. Remove from heat, whisk in ice cream, nutmeg and cinnamon.
Seal in container and place in freezer.
In a coffee mug, add 1 Tbsp hot buttered rum batter. Add a shot of spiced rum, fill with hot water. Top with whipped cream and a sprinkle of nutmeg.

Wild Berry Turnovers


Preheat oven to 400 degrees.
1 package puff pastry, thawed
1 cup frozen wild berries
1/4 cup sugar
1 tsp rum extract

In a sauce pan heat berries and sugar on low for about 10 minutes, stirring occasionally until you get a jelly like consistency. If you feel that your berry mixture is not thick enough mix 1 Tbsp cornstarch with 1/4 cup of water, stirring into berry mixture and continue to cook to consistency.Remove from heat add rum extract and let cool.
On a parchment lined baking sheet lightly sprayed with nonstick spray place 4 squares of puff pastry. Spoon about 1 to 2 tsp of berry mixture onto each pastry square imagining it is a triangle. Fold over into triangle shape. Pinch ends with tines of a fork.
Beat 1 egg with 1 Tbsp of water. Brush on tops of each turnover.
Bake 20 minutes. Serve warm with vanilla ice cream or enjoy cooled.

Chocolate Chip Banana Bread


Preheat oven to 350 degrees. Grease the bottom only of a loaf pan.

2 cups flour
1 cup sugar
1/2 cup butter or margarine, softened
2 eggs
1 cup mashed banana’s
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup chocolate chips

In a mixing bowl add all ingredients except the chocolate chips. Mix on medium speed until mixed well. Stir in chocolate chips. Pour into prepared pan. Bake at 350 for 60-65 minutes. Until toothpick inserted in the middle comes out clean.

Blackberry Cheesecake Swirl Brownies


1 box of brownie mix your choice mixed to the instructions on box. Place batter in 8×8 (prepared to instructions on box) pan. Preheat oven.
In a small bowl mix
1 egg
1 tsp almond extract
1/4 cup sugar
2 Tbsp flour
2 Tbsp butter, softened
4 ounces cream cheese, room temperature
1/2 cup blackberries
Mix all together and dab on top of prepared brownie batter. Drag knife through batter, swirling. Place about 1/2 cup more of blackberries on top.
Bake according to box instructions until completely cooked. Cool and ENJOY!!:)
