Easy Beefy Cheesy Enchilada

1 lb ground beef
3 Tbsp sour cream
1/2 cup shredded cheese, extra for sprinkling on top
1 can enchilada sauce
1 can tomato soup
12 corn tortilla’s
1 can sliced olives

In a skillet season ground beef and brown. I used a little garlic powder, salt and taco seasoning. After beef is browned add sour cream and cheese. Stir together until cheese is melted. Take off stove and set aside.
In a deep skillet add enchilada sauce and tomato soup. Heat sauce until warm all the way through. Pour a little bit of sauce mix on to bottom of a 13×9 pan. Add tortillas to warm sauce one at time heating until warm. Remove tortilla from pan add filling roll and place in baking dish, continue until all are filled and rolled. Add leftover sauce to top of enchilada’s sprinkle with cheese and sliced olives. Place in oven on 400 degrees for about 15 minutes or until cheese is melted and heated thru!! Enjoy!!:)
