Crumb Cake


Preheat oven to 375 degrees. Butter and flour an 8×8 pan.

In a small bowl add
1/2 cup brown sugar
1/4 cup flour
1 tsp cinnamon
Cut in 1/4 cup of butter
Set aside.

1-1/2 cups flour
2-1/2 tsp baking powder
1/2 tsp salt
Mix flour, baking powder and salt set aside dry ingredients.
Beat together
1 egg, beaten
3/4 cup sugar
1/3 cup butter, melted
1/2 cup milk
1 tsp vanilla
Stir in dry ingredients.
Place have batter in prepared pan. Sprinkle with half of topping mixture. Place other half of batter on top and then sprinkle with rest of topping. Bake at 375 degrees for 25-30 minutes. Until knife inserted in center comes out almost clean. Cool on rack.
