1-1/2 pounds chicken, cooked and shredded
1-29 ounce can of pinto beans, drained
1/2 envelope of taco seasonings
2 cups think and chunky salsa
2-1/2 cups broken tortilla chips
4 green onions sliced
2 tomatoes chopped
2 cups shredded cheese
1/4 cup sliced olives
1 cup lettuce
Sour cream and guacamole if you like.
Preheat oven to 350 degrees
Place cooked chicken, taco seasonings, beans and salsa into a skillet heat on medium until it comes to a boil.
In a casserole dish place chips on bottom, add chicken and bean mixture on top of chips. Sprinkle with half of green onions, tomatoes and olives. Top with cheese. Bake for 20-30 minutes uncovered until cheese melts and bubbles. Remove from oven and top with lettuce, remaining tomatoes, onions, olives. Serve with sour cream, guacamole and a sprinkle of chips if you like.
