Chocolate Peppermint Loaf


Preheat oven to 350 degrees. Grease or spray with nonstick spray one 9×5 loaf pan. Set aside.

1/2 cup butter, room temperature
1-1/2 cups sugar
3/4 tsp salt
1 tsp vanilla
1 tsp peppermint extract
1/2 tsp baking powder
2/3 cups cocoa powder (unsweetened)
3 eggs, room temperature
1-1/4 cups flour
3/4 cup milk
1/2 cup chocolate mint chips

In bowl of mixer add butter, sugar, salt, extracts and cocoa powder. Mix till combined.
Add eggs one at a time and mix well.
Turn mixer to low add half of the flour. Then add milk. Add the remaining flour and mix till incorporated. Fold in chocolate chips.
Pour into prepared pan and bake for 55-65 minutes. Insert toothpick in center till it comes out clean when loaf is baked.
Cool on wire rack.
