Carrot Raisin Bread

Preheat oven to 350 degrees. Grease and line with parchment paper one 9 inch loaf pan and set aside.

In a small bowl combine

1-1/2 cups flour

1 tsp baking soda

2 tsp baking powder

2 tsp cinnamon

1/2 tsp salt

set aside.

In a medium bowl whisk together

1 cup veggie oil

1-1/2 cups brown sugar, packed

1/4 cup molasses

3 eggs, room temperature

Add dry ingredients to wet ingredients and stir until combined well.


1/2 cup chopped walnuts

1/2 cup golden raisins

1/2 cup raisins

1 cup shredded carrots

Stir until combined well, Pour into already prepared loaf pan and bake at 350 degrees for 60-70 minutes. Remove from oven and let cool in pan on a wire rack for 10 minutes. Remove from pan and let cool completely. ENJOY!! 🙂



Chicken and Dumplings


3 Boneless, skinless Chicken Breasts

2 pats (about 2 tsp) butter

2 cans cream of chicken soup

1 can chicken broth

4 carrots sliced

4 stalks of celery, sliced

1 small can peas

1 can of grands fluffy buttermilk biscuits (8 biscuits) cut into quarters

In slow cooker add butter and chicken breasts at the bottom. Spoon cream of chicken soup over chicken breasts. Pour in can of chicken broth. Place carrots and celery on top. Cook on high 6 hours.

Carefully shred chicken and then add can of peas. Place quartered biscuits on top and continue to cook on high for 1 more hour.


Carrot Cake Cupcakes



Preheat oven to 350 degrees. Line cupcake tins with cupcake papers (Makes 24 cupcakes)


2 cups flour

1 tsp cinnamon

1/8 tsp ground cloves

1/4 tsp ginger

1/4 tsp nutmeg

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1 cup finely shredded carrots

3 eggs

1 cup sugar

1 cup brown sugar

2/3 cup veggie oil

2 tsp vanilla

In a medium bowl place flour, cinnamon,cloves, ginger, nutmeg, salt, baking powder and baking soda. Whisk together until combined. Stir in carrots and set aside.

In bowl of mixer , mix together eggs, sugar, brown sugar and vanilla until combined and sort of frothy. Slowly add your dry ingredients stirring until combined.

Fill your cupcake papers with 1/4 cup batter and bake at 350 degrees for 24-28 minutes or until toothpick inserted in the center comes out clean. Remove tins from oven and place on cooling racks for 10 minutes. Remove cupcakes from tins and let cool completely.


12-ounces cream cheese

3/4 cup butter, softened

2 tsp vanilla

4-1/2 cups powdered sugar

In bowl of mixer place cream cheese and butter, beat on medium speed until combined and fluffy. Add vanilla and mix until combined. Slowly add powdered sugar and beat until desired frosting consistency.

Frost cooled cupcakes and ENJOY!! 🙂
